Watching my favorite show “Three Sheets” I’ve noticed there are lots of drinks that are prepared by lighting a high proof alcohol on fire then putting it out ,during preparation. Doesn’t this burn off the alcohol? And if it does so partially, does anyone know how much alcohol is lost?

Yes it burns off the alcohol, specially in shots where its not a huge amount of alcohol. I laugh at people at bars taking flaming shots, it’s pointless since most of the alcohol is burned off.
I would say 50% of the alcohol is burned, but it depends how long it is lit.
